Recipe: Healthy Wheat Flour Cake

Love cakes? Ahaa!, But the refined flour and sugar in it are stopping you from enjoying that yum slice of cake? Sincerely saying, when I have to take up a slice of cake, my mind goes through a hurricane of thoughts – what if I get fat? What if the refined flour in the cake gets successful in its mission of making my stomach bloat? But my desire and love for cakes would always find its way over my thoughts.

If you don’t want to get filled with guilt or want a healthier version of the cake? Try this guilt-free cake recipe made of wheat flour and Jaggery. I wasn’t expecting this cake to turn out so yummy, fluffy, and delicious. Moreover, it is an eggless cake.

I don’t know if a wheat cake is a new delight to you or not. But, I have tried baking it for the first time ( as I’m still working on my cooking skills) and, I’m so happy with how this cake comes up.

What do you need?

  • Jaggery (grated or powder) – 1 cup
  • Wheat flour – 1.5 cup 
  • Baking powder – 2 teaspoon
  • Baking soda – 1 teaspoon
  • Oil (olive or refined) – Half cup or 6-8 tablespoon
  • Curd or yogurt – 3/4th cup
  • Milk( can replace with almond milk) – 1 cup
  • Vanilla essence – 1 teaspoon
  • Chopped almonds, dates, cashew nuts and raisins (optional)
  • Grated ginger – a pinch (optional)

How to do?

  1. In a mixing bowl, combine the grated or powdered jaggery with oil and curd and mix well with a whisk
  2. Now add wheat flour to the mixing bowl by sieving
  3. Add baking powder, baking soda, and vanilla essence
  4. Add the desired dry fruits, grated ginger and choco chips to the mixture
  5. Mix well the ingredients by adding milk to it, until you get the required consistency. Use the cut and fold method to mix.
  6. Dust the cake pan with flour and line the bottom of the pan with a parchment or butter paper and grease it with butter or oil
  7. Pour the mixed cake batter into the cake pan evenly 
  8. Add almond flakes, and other desired garnishing ingredients on the cake
  9.  Bake the cake at 180 Celsius for 35 – 40 minutes
  10. Allow the cake to cool in the pan for 10 – 15 minutes
  11. Transfer to a wire rack to cool completely
  12. The final and the most favorite step: Cut and treat yourself with this yummy cake.

Alternates:

Baking on the stove:

  • Take a cooking pot (suitable for your cooking pan ) and put a half cup of salt into it
  • Heat the pot on high heat on the stove for 5-10 minutes, before placing the cake pan
  • Place the cake tin, cover the lid without the hole and simmer the flame
  • Let the cake cook for 45-50 minutes and check the cake after every 15 minutes
  • You can check with a toothpick to know if the cake is evenly cooked
